Easy Sunday Comforts: Apple and Lavender Tart

Sundays are great. Although Sundays signify the last part of the lazy period – the wholesome feasts of food you’re likely to have at the end of the weekend are the best. This week, why not have a go at something a little different with my recipe for apple and lavender tart? The lavender gives this dessert a little more fragrance, making it even better alongside custard!

The recipe is based on one for a bakewell tart, yet I’ve taken out the almonds. Although I love almonds, I know that there are many of you out there who do not. As well as this, almonds can also be pretty expensive to buy so I’m keeping the costs down here. I’d also like to say that this is probably one of the easiest tarts I’ve ever made. See, I normally cheat and buy pre-made tart cases; except, this time the shop had ran out. Naturally, I couldn’t live without making this pastry, so I attempted my own.

To make your own delicious lavender and apple tart, here is the recipe:

For the Pastry

  • Take 175g of plain flour and 75g of chilled unsalted butter and rub them together using your fingertips. Once the mixture resembles breadcrumbs, add a couple of tablespoons of cold water and, using your hands, turn the breadcrumbs into a ball.
  • Roll out the dough onto a lightly floured surface to the size of your tart case or pie dish and then place into the fridge for 30 minutes.
  • Pre-heat the oven to Gas Mark 6/ 200C.
  • Remove the pastry from the fridge lay baking paper over the top and either spread rice or baking beans over the top. Blind bake in the oven for 15 minutes. Once 15 minutes are up, take the tart out of the oven, removing the baking beans and paper. Then let the pastry dry out for a further 5 minutes in the oven.

For the Filling

  • Next, take one large apple or two medium-sized fruits and slice thinly lengthways. Lay these over the top of your tart case.
  • Cut 125g of butter and melt in a saucepan. Into this, add 125g of caster sugar as well as a large egg and mix together well. Finally, take a teaspoon of lavender and stir this into the mix.
  • Pour the butter and sugar mix over the apples and then place the tart into the oven for around 35 minutes, or until the mix has become slightly spongy and has browned on the top.
  • Enjoy this delicious tart with some freshly made custard or some lovely icecream.
